This Indonesian inspired sandwich is one of our favourites. The open sandwich is a little spicy because of the sambal and refreshing because of the cucumbers on top. It is the ideal lunch for me, because it also gives me a lot of energy to get through the day. Enjoy!
Ingredients
- 2 Slices of whole grain sourdough bread (175 grams)
- 25g of crumbled peanuts
- 30g of Peanut butter (Preferably one with only peanuts in it.)
- A few slices of cucumber (50g)
- One tablespoon of Sambal (Or if you don’t have sambal, you can use hot sauce or another chili paste)
Instructions
- Slice off 2 slices of bread (Optional: Toast them!)
- Cut your cucumber into half moons
- Give your peanuts a rough chop and crush them
- Spread the peanut butter on your 2 slices of bread.
- Spread the sambal on top of your peanut butter
- Place the cucumber on top
- And sprinkle the peanut bits on top of the sandwich
- Serve up!
